Avocado Caprese Boat

Ingredients:


  • 1 ripe Haas avocado, cut in half & de-cored.
  • 2 tablespoons of pancetta, chopped.
  • 2 pieces of cheese, chopped into small cubes.
  • 2 tablespoons of chopped fresh basil leaves.
  • 5 Roma tomatoes, cut into small cubes.
  • 1 tablespoon of olive oil.
  • 1 tablespoon of balsamic vinegar.
  • 1 pinch of sea salt.
  • 1 dash of ground black pepper.

Instructions:


  1. Lay avocado halves on a serving plate, with hollow parts facing up.
  2. In a mixing bowl, add tomato, mozzarella, pancetta, sea salt, pepper, olive oil & balsamic vinegar. Mix well with a spoon.
  3. Carefully fill hollow parts of the avocado halves. Sprinkle with basil leaves.
  4. Enjoy Healthy Dinner!
