Ingredients:
- 1 ripe Haas avocado, cut in half & de-cored.
- 2 tablespoons of pancetta, chopped.
- 2 pieces of cheese, chopped into small cubes.
- 2 tablespoons of chopped fresh basil leaves.
- 5 Roma tomatoes, cut into small cubes.
- 1 tablespoon of olive oil.
- 1 tablespoon of balsamic vinegar.
- 1 pinch of sea salt.
- 1 dash of ground black pepper.
Instructions:
- Lay avocado halves on a serving plate, with hollow parts facing up.
- In a mixing bowl, add tomato, mozzarella, pancetta, sea salt, pepper, olive oil & balsamic vinegar. Mix well with a spoon.
- Carefully fill hollow parts of the avocado halves. Sprinkle with basil leaves.
- Enjoy Healthy Dinner!
