Ingredients:
For Chicken:
- 2-4 ounce of organic chicken breast. Sliced into thin pieces.
- 1 table spoon of mirin.
- Olive oil cooking spray.
- 1 tea spoon of ginger powder.
- 1 pinch of Garlic salt.
- 1 pinch of white pepper powder.
- 1 teaspoon of corn starch.
- 1 tea spoon of lite gluten-free soy sauce.
- 1 avocado, peeled, de-cored & diced.
- 2 tablespoons of organic shredded Parmesan cheese.
- 2 cups of grape tomatoes. Cut into halves.
- 11/2 table spoons of Olive oil.
- 2 tablespoons of organic balsamic vinegar.
- 1 dash of dry Italian Seasoning
- 5-6 pieces of fresh basil leaves, chopped.
Instructions:
- Turn oven on to broil.
- In a mixing bowl, add chicken, mirin, garlic salt, white pepper powder, ground ginger, soy sauce, & corn starch. Mix well.
- Place chicken pieces on broiling rack, & broil on high for 5 minutes. Turn chicken pieces over, & broil for another 5 minutes.
- While broiling, mash avocado in new mixing bowl. Add shredded Parmesan cheese & mix. Set aside.
- Over stove top, heat frying pan on high. Add olive oil and pour in Italian seasoning. Heat oil for 30 seconds.
- Add tomato into frying pan, & stir for 20 seconds.
- Reduce heat to medium, add balsamic vinegar, & stir for another 2 minutes. Turn off heat. Transfer tomatoes to a bowl, & set aside.
- When chicken is fully cooked on both sides, remove pieces from oven, & place each piece onto a plate. Add a spoon of avocado & Parmesan mix on top of each piece of chicken.
- Top chicken with tomatoes & chopped basil leaves.
